Ingredients:

2 cups makhana (fox/lotus seeds)

1 small onion, finely chopped

1 small tomato, finely chopped

1 small cucumber, finely chopped

1 small boiled potato, chopped (optional)

2 tablespoons roasted peanuts (optional)

2 tablespoons green chutney (coriander-mint)

1 tablespoon tamarind chutney

1/2 teaspoon chaat masala

1/4 teaspoon roasted cumin powder

1 green chili, finely chopped (optional)

Salt to taste

Fresh coriander leaves, chopped

1 teaspoon lemon juice

Healthy and Tasty Makhana Bhel

Instructions:

Dry-roast the makhana in a pan over low-medium heat for 6-8 minutes, until they become crispy. Stir constantly to prevent burning. Let them cool. In a large mixing bowl, combine the roasted makhana, onion, tomato, cucumber, boiled potato, and peanuts.

Add green chutney, tamarind chutney, chaat masala, roasted cumin powder, green chilies, and salt. Mix well.

Squeeze lemon juice and garnish with fresh coriander leaves.

Mix just before serving to keep the makhana crunchy.
