Ingredients:
Cauliflower florets – 500 grams
Mustard oil – 1 cup
Mustard seeds (Rai) – 2 tablespoons (coarsely ground)
Fennel seeds (Saunf) – 1 tablespoon (coarsely ground)
Fenugreek seeds (Methi) – 1 teaspoon (coarsely ground)
Nigella seeds (Kalonji) – 1 teaspoon
Turmeric powder – 1 teaspoon
Red chili powder – 1 tablespoon (or to taste)
Salt – 2 tablespoons (or to taste)
Vinegar – 3-4 tablespoons
Asafoetida (Hing) – A pinch

Instructions:
Prepare the Cauliflower:
Wash the cauliflower and cut it into small florets.
Bring water to a boil in a large pot. Add the cauliflower florets to it and boil (blanch) for 2-3 minutes; then drain the water and spread the cauliflower out on a clean towel. Allow it to dry completely (ideally, place it under a fan or in the sunlight for a few hours).
Prepare the Spice Blend:
In a bowl, combine the coarsely ground mustard seeds, fennel seeds, fenugreek seeds, nigella seeds, turmeric powder, red chili powder, salt, and asafoetida.
Mix and Marinate:
Add the dried cauliflower florets to the spice mixture. Mix thoroughly to ensure the spices coat the cauliflower evenly.
Add Oil and Vinegar:**
Heat the mustard oil until it begins to smoke (reaching its smoking point). Then, let it cool down slightly (until it becomes lukewarm).
Pour the lukewarm oil and vinegar over the cauliflower and spice mixture. Mix well.
Storage:
Transfer this mixture into a clean, dry glass jar. Seal the jar and let it marinate at room temperature for 2–3 days; shake the jar once a day to ensure an even distribution of spices.
Your cabbage pickle will be ready to eat after 3 days, but it tastes even better after a week.
Tips:
To prevent the pickle from spoiling, ensure that it contains absolutely no water.
You can also add carrots and turnips to make a mixed pickle.
Always use a dry spoon when scooping out the pickle.
