Ingredients:

 1 kg raw mangoes (preferably firm and green)

 1 kg sugar

 1/2 tsp cardamom powder

 1/2 tsp saffron strands (optional)

 1/2 tsp black salt (optional)

 1-2 tbsp lemon juice

 Water, as required


 Homemade Raw Mango Murabba Recipe 


Instructions:


1. Peel and Prepare the Mangoes:

- Wash and peel the mangoes. Cut them into thin slices or grate them and discard the pits.

2. Soak the Mangoes:

- Place the mango pieces in a bowl and sprinkle a little salt over them. Let them sit for 1-2 hours to soften (this step is optional, but it helps to draw out excess water from the mangoes).

- Rinse off the salt and drain the water from the mangoes.

3. Cook the Mangoes:

- Place the mango pieces in a heavy-bottomed pot (or pan) and add enough water to completely submerge them. Cook over medium heat until the mangoes become tender (approximately 10-15 minutes).

- If any excess water remains, drain it off.

4. Add the Sugar:

- Add the sugar to the cooked mangoes. Stir well and continue cooking over low to medium heat.

- The sugar will melt to form a syrup. Keep cooking—stirring occasionally—until the syrup thickens and reaches a "one-string consistency" (when a thin thread forms between your fingers as you test a drop of the syrup). 

5. Enhance the Flavor:

- Add cardamom powder, saffron, black salt, and lemon juice. Mix well.

- Cook for another 2–3 minutes. Remove from the heat.

6. Cool and Store:

- Allow the murabba to cool down completely. Transfer it into a clean, dry glass jar.

- Store it in a cool, dry place. If stored correctly, it remains fresh for several months.


Serving Suggestion:

Enjoy the mango murabba with parathas or toast or serve it as a sweet accompaniment to your meal. Tip: To prevent spoilage, ensure that both the jar and the spoon used are dry. Adjust the quantities of sugar and spices according to your personal taste.
