The Famous Gujarati Breakfast Dhokla Recipe
When it comes to the best breakfast, Gujarat can be named in it. The most famous dish here, 'Dhokla' is liked not only in India but also abroad. It is light in taste, nutritious, and quick to prepare breakfast, due to which it is eaten with great gusto by children to the elderly. If you also want to make soft and fluffy dhokla at home, then this article is for you. Believe me, if you prepare it in the way we have instructed, then it will be one of the favorite breakfasts of all the household members. So, let's know how to make it.
Ingredients
Gram flour (gram flour) – 1 cup
Curd – 1/2 cup (preferably sour)
Water – 1/2 cup (or as per requirement)
Ginger-green chilli paste – 1 tsp
Lemon juice – 1 tsp
Turmeric powder – 1/4 tsp
Eno fruit salt – 1 tsp (or 1/2 tsp baking soda + 1/2 lemon)
Salt – as per taste
For tempering
Oil – 1 tbsp
Mustard seeds – 1 tsp
Curry leaves – 8–10 leaves
Green chilli – 2–3, cut lengthwise
Sugar – 1 tsp
Water – 1/2 cup
Coriander leaves – finely chopped
Coconut powder – for garnishing (optional)

Instruction
1. Prepare the batter
-Add gram flour, curd, turmeric, ginger-green chilli pastes, and salt in a bowl.
-Mix water to make a thick and smooth batter.
-Keep it covered for 15–20 minutes.
2. Prepare for steaming
-Take an idli cooker or a large pan. Heat it by adding some water at the bottom.
-Grease a plate or dhokla tray with oil.
3. Add Eno and cook
-Now add Eno or baking soda & lemon to the batter and mix immediately.
-As soon as the batter swells, immediately pour it into the greased tray.
-Place it in a preheated steamer and cook on high flame for 15–20 minutes.
-Put a knife in it and check if it comes out clean; the dhokla is ready.
4. Tadka and serve
-Heat some oil in a pan. Add mustard seeds, curry leaves, and green chillies.
-Add sugar and water, and let it boil.
-Pour this seasoning over the cut dhokla and leave it like this for 5 minutes so that the masala penetrates inside.
-Add green coriander and coconut powder on top.
Keep these things in mind
-If there is no sour curd, then definitely add 1/2 teaspoon lemon juice.
-After adding Eno, immediately put the batter in the steamer; otherwise, the dhokla will not become fluffy.
-It can also be cooked in a microwave in 5–6 minutes.
