Simple Veg Pulao Recipe


Ingredients:


- 1 cup Basmati rice

- 2 cups water

- 1 medium onion, thinly sliced

- 1 medium tomato, chopped

- 1 cup mixed vegetables (carrots, peas, beans, bell pepper)

- 2 tablespoons oil or ghee

- 1 teaspoon cumin seeds

- 2-3 green chilies, slit (adjust to taste)

- 1-2 bay leaves

- 2-3 cloves

- 1-2 green cardamom pods

- 1 small cinnamon stick

- Salt to taste

- Fresh coriander leaves for garnish

Simple Vegetable Pulao 


Instructions:


1. Rinse the Rice: Start by rinsing the Basmati rice under cold water until the water runs clear. Soak it in water for about 20-30 minutes, then drain.


2. Sauté the Spices: In a pot, heat the oil or ghee over medium heat. Add cumin seeds, bay leaves, cloves, cardamom pods, and cinnamon stick. Sauté for a minute until they release their aroma.


3. Cook Onions: Add the sliced onions to the pot and sauté until they turn golden brown.


4. Add Vegetables: Stir in the chopped tomatoes and cook until they soften. Then, add the mixed vegetables and green chilies. Cook for another 3-4 minutes.

5. Add Rice: Add the soaked and drained rice to the pot. Gently sauté for 2-3 minutes, ensuring the rice is well-coated with the spices.


6. Cook Pulao: Pour in 2 cups of water and add salt to taste. Bring it to a boil, then lower the heat, cover the pot with a lid, and let it simmer for about 15-20 minutes or until the rice is cooked and the water has been absorbed.


7. Fluff and Garnish: Once done, turn off the heat and let it sit covered for 5 minutes. Fluff the pulao with a fork, garnish with fresh coriander leaves, and serve hot.
