Dhaba Style Chhole Bhature Recipe
Ingredients:
For Chhole (Chickpeas):
- 1 cup dried chickpeas (chana), soaked overnight
- 3-4 cups water (for cooking)
- 2 medium onions, finely chopped
- 2 medium tomatoes, pureed
- 1-2 green chilies, slit
- 1-inch piece of ginger, grated
- 4-5 garlic cloves, minced
- 2 teaspoons chole masala (or garam masala)
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder (adjust to taste)
- ½ teaspoon turmeric powder
- 1 teaspoon salt (adjust to taste)
- 2 tablespoons oil or ghee
- Fresh coriander leaves for garnish
- 1 tea bag (optional for color)
For Bhature:
- 2 cups all-purpose flour (Maida)
- 1 tablespoon semolina (Rava)
- 1 tablespoon yogurt
- 1 teaspoon sugar
- ½ teaspoon baking powder
- Salt to taste
- Warm water (as needed)
- Oil for deep frying

Instructions:
1. Prepare the Chhole:
- After soaking the chickpeas, drain and rinse them. In a pressure cooker, add the soaked chickpeas and enough water to cover them. If using a tea bag for color, add it now. Cook for about 4-5 whistles or until soft. Remove and keep aside.
- In a pan, heat oil or ghee. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown. Then add minced garlic, grated ginger, and green chilies. Sauté for a minute until fragrant.
- Add the pureed tomatoes and cook until the oil separates from the mixture.
- Stir in the cooked chickpeas along with the water they were cooked in (adjust to get your desired consistency).
- Add chole masala, coriander powder, red chili powder, turmeric, and salt. Mix well.
- Let it simmer for about 15-20 minutes, allowing the flavors to meld together. Garnish with fresh coriander leaves before serving.

2. Prepare the Bhature:
- In a mixing bowl, combine all-purpose flour, semolina, yogurt, sugar, baking powder, and salt. Mix well.
- Gradually add warm water, kneading until you get a soft, pliable dough. Cover with a damp cloth and let it rest for about 2 hours.
- After resting, divide the dough into equal portions and roll each portion into a ball.
- Roll out each ball into a circle about 6 inches in diameter (not too thin).
- Heat oil in a deep-frying pan. Once hot, gently slide in the rolled bhature. Fry until it puffs up and turns golden brown on both sides.
- Remove and drain on paper towels.
3. Serve:
- Serve the hot chhole with the freshly made bhature, accompanied by sliced onions, green chilies, and a wedge of lemon. Enjoy your delicious Dhaba-style chhole bhature!
