Mumbai Special Vada Pav | Batata Vada | Vada Pav Recipe


Vada Pav is one of the most famous street foods of Mumbai. It is also known as a Bombay Burger in Mumbai. In this, Ladi Pav is cut from the middle and filled with dry peanut chutney and butter and then potato vada is served in it. Tamarind chutney, green chili chutney and fried green chilies are also served with it. We can also make this type of Vada Pav at home.

To make Vada Pav, we will need the main ingredients: Indian masala, boiled potatoes, and Ladi Pav. Now you can increase or decrease the ingredients according to the number of people you want to make this recipe for. This Vada Pav recipe is famous in every part of India, which is mostly served with garam masala tea in the morning breakfast. So let us learn to make Mumbai-style Vada Pav at home today.


Ingredients


For the vada filling:

- 2 tsp oil

- 1/2 tsp mustard seeds

- 1/2 tsp fennel seeds

- 1/2 tsp cumin seeds

- Pinch of Hing (Asafoetida)

- A few curry leaves

- 1-2 long

- 1 inch ginger, crushed

- 2 cloves garlic, crushed

- 1 chilli, finely chopped

- 2 tsp coriander leaves, finely chopped

- ¼ tsp turmeric

- 2-3 potatoes, boiled and mashed

- Salt to taste

- 1 tsp lemon juice


For the gram flour batter:

- ¾ cup gram flour

- ¼ tsp turmeric

- ¼ tsp red chilli powder

- Pinch of hing

- ¼ tsp salt

- ¼ tsp baking soda

- ½ cup 6water

- Oil, to fry


Other Ingredients:

- Laddi Pav

- Green chillies (for frying)

- Dry peanut chutney (To make this chutney, grind peanuts, garlic, red chilli powder, or salt to taste)


Mumbai Street Style Vada Pav


Instructions


How to make the vada:

1. Firstly, heat 2 tsp oil in a large pan. Add 1/2 teaspoon mustard seeds, cumin seeds, fennel seeds, a pinch of asafoetida, and a few curry leaves.

2. Add 1 inch ginger, 2 cloves garlic, 1 chilli, 2 teaspoons coriander and saute well. Next, add 1/4 teaspoon turmeric and saute for 30 seconds.

3. Next, add 2 boiled and mashed potatoes and 1/2 teaspoon salt. Mix well and make sure all the spices are well combined with the potatoes.

4. Turn off the flame and add 1 teaspoon lemon juice. Mix well, and the potato mixture is ready. Keep it aside.

5. Next, prepare the gram flour batter by taking ¾ cup gram flour, ¼ teaspoon turmeric powder, ¼ teaspoon chili powder, a pinch of asafoetida, salt to taste, and ¼ teaspoon baking soda.

6. Add half a cup of water as required. Prepare a smooth and lump-free batter. Keep in mind that the batter should neither be too thin nor too thick.

7. Now, make a ball-like mixture of the potatoes. Make balls as per your choice.

8. Dip in the prepared gram flour batter and coat well. Deep fry in hot oil. Keep stirring it.

9. Fry the vada on medium flame till it becomes golden and crispy.

10. Take out the vada on kitchen paper and absorb the excess oil. Keep aside.

11. Now turn off the flame and fry the green chillies. Fry the chillies well and

12. Take out the fried chillies on kitchen paper and absorb the excess oil. Now sprinkle some salt on it.

13. Now add 2 tablespoons of water to the remaining gram flour batter and pour it in hot oil and prepare churan. Fry the churan on medium flame till it becomes golden and crispy.

14. Dry the Churan on kitchen paper to absorb the excess oil. Keep aside.


How to make Vada Pav:

1. Now, instead of cutting the ladi pav whole, cut it in half from the middle.

2. Spread 1 tsp green chutney, ½ tsp tamarind chutney, and ½ tsp dry garlic peanut chutney on one side of the pav.

3. Place it in the centre of the prepared vada pav.

4. Sprinkle some prepared churan as well and place fried chillies on top of the vada.

5. Finally, press the vada pav and serve immediately. You can also eat it with Garam Masala tea.
