Restaurant Style Kaju Curry Recipe
Ingredients:
- 1 cup cashews (Kaju)
- 1 large onion, finely chopped
- 2 medium tomatoes, pureed
- 1 teaspoon ginger-garlic paste
- 2-3 green chilies, slit
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 2 tablespoons fresh cream (optional)
- 3-4 tablespoons oil or ghee
- Salt to taste
- Fresh coriander leaves for garnish
- Water as needed
1. Preparation of Cashews:
- Soak the cashews in warm water for about 30 minutes. Drain and set aside. You can also blend them with a little water to make a smooth paste if you prefer a richer curry.
2. Cooking the Base:
- In a pan, heat oil or ghee over medium heat. Add the finely chopped onions and sauté until they turn golden brown.
- Stir in the ginger-garlic paste and green chilies and cook for another minute until the raw smell disappears.
3. Adding Spices:
- Add the pureed tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook this mixture until the oil starts to separate from the masala, stirring occasionally.

4. Incorporating Cashews:
- Add the soaked cashews (or cashew paste) to the masala. Mix well and let it cook for a couple of minutes.
5. Creating the Gravy:
- Add water to achieve your desired consistency of the gravy. Bring it to a gentle boil and then simmer for about 5-7 minutes.
6. Finishing Touches:
- Stir in garam masala and fresh cream if using. Mix well and let it cook for another couple of minutes. Adjust salt if needed.
7. Garnishing:
- Remove from heat and garnish with fresh coriander leaves.
8. Serving:
- Serve hot with roti, naan, or rice.
