Restaurant Style Pav Bhaji Recipe
Ingredients:
For the Bhaji:
- 2 cups mixed vegetables (potatoes, carrots, peas, capsicum, and cauliflower)
- 1 large onion, finely chopped
- 2 large tomatoes, finely chopped
- 1/2 cup finely chopped bell pepper (capsicum)
- 1 tablespoon ginger-garlic paste
- 2-3 green chilies, slit (adjust to taste)
- 1 teaspoon turmeric powder
- 1 tablespoon red chili powder (adjust to taste)
- 2 teaspoons pav bhaji masala
- 2 tablespoons butter (plus extra for serving)
- Salt to taste
- Fresh coriander leaves for garnish
- Lemon wedges for serving
For the Pav:
- 8-10 pav (bread rolls)
- Butter for toasting the pav

Instructions:
1. Prepare the Vegetables:
- Boil the mixed vegetables (potatoes, carrots, peas, capsicum, and cauliflower) until soft. You can use a pressure cooker or a regular pot. Drain and mash them coarsely.
2. Cook the Bhaji:
- In a large pan, heat 2 tablespoons of butter over medium heat. Add chopped onions and sauté until they turn translucent.
- Add the ginger-garlic paste and green chilies. Sauté for another minute until fragrant.
- Stir in the chopped tomatoes and cook until they soften and the oil starts to separate.
- Add turmeric powder, red chili powder, and pav bhaji masala. Mix well and cook for a couple of minutes.
- Add the mashed vegetables to the pan along with salt to taste. Mix everything thoroughly and mash a bit more if needed to combine.
- Cook for about 5-10 minutes, adding a little water if the mixture is too thick. Adjust the seasoning if necessary.
- Finish with 2 more tablespoons of butter and mix well. Garnish with fresh coriander leaves.

3. Toast the Pav:
- In a separate pan, melt some butter and toast the pav on both sides until golden brown.
4. Serve:
- Serve the bhaji hot, topped with a dollop of butter, along with the toasted pav. Add lemon wedges on the side and enjoy your delicious restaurant-style Pav Bhaji!
