Bundi Raita Recipe | Bundi Raita is a popular and delicious raita that can be made in just a few minutes. It is a great accompaniment to dishes like vegetable biryani, aloo paratha, and pulao. It is very easy to make, and the best part is that all the ingredients used in it are available at home. In this raita recipe, curd is first whipped, and then boondi and some spices like red chili powder and cumin powder are added to it. You can also add sugar to make it a little sweet. So, let's make this easy boondi raita recipe at home today. 


Ingredients

For Boondi:

- 1½ cups gram flour

- ¼ tsp salt

- 1 cup water

- 1 tbsp oil

- Oil for frying


For Raita:

- ½ cup boondi, homemade or store-bought

- 1 cup warm water

- 1 cup curd

- 2 tbsp sugar (optional)

- ¼ tsp cumin powder

- ¼ tsp Kashmiri red chilli powder

- ¼ tsp salt

- 2 tbsp coriander, finely chopped

Instructions

How to make Boondi:

- Firstly, in a large mixing bowl, add 1½ cups gram flour and ¼ tsp salt.

- Now add 1 cup of water and whisk the batter.

- Mix till the batter becomes smooth.

- Then, add 1 tbsp oil and keep whisking for 2 minutes. Prepare a smooth batter.

- Take a spoon with small holes and pour the prepared gram flour batter into it.

- Pat gently with the help of a spoon so that the gram flour drops fall into the oil. Do not add too many boondis at once to the oil.

- Keep stirring from time to time and when the boondis become crispy, remove them and keep them on a kitchen paper towel.


How to make Boondi Raita:

- Take half a cup of boondis in a bowl. Use homemade boondis or store-bought boondis. Soak them in 1 cup of hot water for 5-10 minutes. Gently squeeze out the water from the boondis. Keep aside.

- Take 1 cup curd, 1 tsp cumin powder, ¼ tsp chili powder, 2 tsp sugar (optional) and ¼ tsp salt in a small bowl.

- Whisk well and make a smooth curd. Add the soaked boondis and mix well.

- Finally, add 2 teaspoons of coriander and mix well. Garnish with boondi before serving.

- Eat boondi raita with vegetable pulao, biryani, aloo ka paratha or paneer ka paratha.


Note:

- If you like the crispy taste of boondi in the boondi raita recipe, then you can add boondi without soaking it. For this, add boondi to it while serving the raita.
