Ingredients:
20 fresh lychees, peeled and pitted
1 cup cold water
1 tablespoon sugar or honey (optional)
A few mint leaves
Juice of half a lemon

Instructions:
Peel the lychee—Separate the peel from the pulp with your fingers. You can also score the peel with a knife and then peel it. Either way, remove any remaining pieces of peel or seeds before juicing.
Blend—Place all ingredients in a blender. Blend until smooth. Strain the juice through a fine-mesh sieve.
Sweeten — If the lychees are very sweet, you can use honey or maple syrup instead of sugar or omit the sweetener altogether.
Serve — Pour over ice and garnish with a mint leaf and a lemon wedge.
Tips:
Use 10 lychees, 1 cup water, and 1 tablespoon white sugar or honey per person. You can also make the juice using canned lychees, although the taste won't be as fresh and refreshing. If you prefer, add a little ginger when blending.
It can be stored in an airtight container in the refrigerator for up to 3 days. If you don't plan on drinking all the juice right away, you can freeze it in ice cube trays or a freezer-safe container for up to two months.
