Instructions:
Step 1 — Toast the Marshmallows: Line a baking sheet with aluminum foil (do not use parchment paper, as it may catch fire). Lightly mist the foil with cooking spray to prevent the marshmallows from sticking. Place the 10 marshmallows on the foil. Using a blowtorch, toast 8 of the marshmallows on all sides until they are well-charred — this will impart a smoky flavor. The remaining 2 marshmallows will be used for garnish, so toast them only until they turn a light golden brown. Alternatively, skewer them and toast them one by one over a gas stove flame or an open fire.
Step 2 — Let Cool Slightly: Before blending, allow the freshly toasted marshmallows to cool down a bit so that the ice cream does not melt excessively.
Step 3 — Prepare the Glass: In a small bowl, melt the chocolate for 30 seconds, then continue melting it in 15-second intervals until it is completely smooth and melted. Dip the rims of your milkshake glasses into the melted chocolate, and then dip them into the crushed graham crackers.
Step 4 — Blend: Add the milk, melted chocolate, and cooled toasted marshmallows to a blender. Blend until slightly smooth, then add the graham cracker pieces and a pinch of salt, and blend again until smooth. Add the ice cream and blend or pulse until everything is thoroughly combined.
Step 5 — Serve: Pour your shake into the prepared glasses, sprinkle the remaining graham cracker pieces on top, drizzle with the remaining melted chocolate, and place a whole toasted marshmallow on top of each glass.
Toast the marshmallows until they are slightly charred—it is the flavor of the burnt sugar that gives the milkshake its authentic toasted marshmallow taste.
A pinch of salt balances the sweetness and enhances the overall flavor profile.
Cut large marshmallows in half before toasting so that they melt thoroughly all the way through—toasting whole marshmallows can leave a solid, unmelted core inside. Since marshmallows are naturally very sticky, they actually help stabilize the shake—allowing you to store it in the refrigerator for up to a day and finish it later.
Deeply charred marshmallows are what distinguish this shake from a standard chocolate shake—so don't hesitate to use that torch!
