Spicy Potato & Cauliflower Sabji Recipe
Ingredients:
- 2 medium potatoes (aloo), peeled and cubed
- 1 medium cauliflower (gobhi), cut into florets
- 2 tablespoons oil (preferably vegetable or mustard oil)
- 1 teaspoon cumin seeds (jeera)
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 1 teaspoon ginger-garlic paste
- 1-2 green chilies, slit (adjust to taste)
- 1 teaspoon turmeric powder (haldi)
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon coriander powder (dhania)
- Salt to taste
- Fresh cilantro (coriander leaves) for garnish

Instructions:
1. Prepare the Vegetables: Start by washing and chopping the potatoes and cauliflower into bite-sized pieces.
2. Heat Oil: In a large pan or kadhai, heat the oil over medium heat. Once hot, add the cumin seeds and let them sizzle for a few seconds.
3. Sauté Onions: Add the finely chopped onions and sauté until they are golden brown.
4. Add Ginger-Garlic Paste: Stir in the ginger-garlic paste and green chilies, cooking for another minute until fragrant.

5. Incorporate Tomatoes: Add the chopped tomatoes and cook until they become soft and mushy.
6. Spice It Up: Mix in the turmeric powder, red chili powder, coriander powder, and salt. Stir well to combine the spices with the tomato-onion mixture.
7. Add Vegetables: Gently add the cubed potatoes and cauliflower florets. Stir to coat them with the spice mixture.
8. Cooking: Cover the pan and let it cook on low heat for about 15-20 minutes, stirring occasionally until the vegetables are tender. If needed, add a little water to prevent sticking.
9. Check for Seasoning: Taste and adjust salt or spices as needed.
10. Garnish: Once cooked, turn off the heat and garnish with chopped fresh cilantro.
11. Serve: Serve hot with roti, paratha, or rice.
