Ingredients:
For the dal:
- 1 cup split yellow moong dal (or a mix of moong and masoor dal)
- 4 cups water
- 1/2 teaspoon turmeric powder
- Salt to taste
For the tempering (tadka):
- 2 tablespoons ghee (or oil)
- 1 teaspoon cumin seeds
- 2-3 dried red chilies
- 1 medium onion, finely chopped
- 2-3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 green chilies, slit
- 1 medium tomato, chopped
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon garam masala
- Fresh coriander leaves for garnish
- Lemon wedges for serving

Instructions:
1. Prepare the Dal:
- Rinse the dal under cold water until the water runs clear. This helps remove excess starch.
- In a pot, add the rinsed dal, water, turmeric powder, and salt. Bring to a boil.
- Once boiling, reduce the heat to low and cover. Let it simmer until the dal is soft and cooked through (about 20-25 minutes). You can also use a pressure cooker for quicker cooking.
2. Make the Tempering (Tadka):
- In a separate pan, heat ghee over medium heat.
- Add cumin seeds and dried red chilies. Let them crackle for a few seconds.
- Add the chopped onions and sauté until golden brown.
- Stir in the minced garlic, ginger, and green chilies. Cook for another minute until fragrant.
- Add the chopped tomato and cook until it softens.
- Add red chili powder and garam masala. Mix well and cook for a minute.

3. Combine:
- Once the dal is cooked, mash it slightly with the back of a ladle for creaminess.
- Pour the tempering mixture over the dal and stir well. Let it simmer for an additional 5-10 minutes to allow the flavors to meld together.
4. Serve:
- Garnish with fresh coriander leaves. Serve hot with steamed rice, naan, or roti, along with lemon wedges on the side.
