Suji Halwa recipe in Indian Style

Semolina Halwa Recipe


Ingredients:

- 1 cup semolina

- 1 cup sugar (to taste)

- 1/2 cup ghee (clarified butter)

- 3 cups water or milk (or a mixture of both)

- 1/4 cup chopped nuts (cashews, almonds, etc.)

- 1/4 teaspoon cardamom powder

- A pinch of saffron (optional)

- Raisins (optional)


Instructions:

1. In a heavy-bottomed pan, heat ghee over medium heat. Once hot, add the semolina and roast it, stirring constantly, until it turns golden brown and emits a nutty aroma. Be careful not to burn it.

2. In a separate vessel, bring water or milk to a boil. If using saffron, add it to the liquids and mix well.

3. Slowly add boiling water or milk to the roasted semolina and stir continuously to prevent lumps from forming.

4. Add sugar to the mixture and mix well. Cook until the semolina absorbs the liquid and the halwa thickens, about 5-7 minutes.

5. Add cardamom powder and mix well. Add chopped nuts and raisins and mix again. Cook for a few more minutes until everything is well combined.

6. Remove from heat and allow to cool slightly. Serve hot, garnish with additional nuts if desired.
