Ingredients:
- 1 cup moong dal (yellow moong lentils)
- 3 cups water
- 1 tbsp oil or ghee
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1 pinch asafoetida
- 1 onion, finely chopped
- 2-3 garlic cloves, chopped
- 1-2 green chillies, chopped (to taste)
- 1 tomato, chopped
- ½ tsp turmeric powder
- ½ tsp red chilli powder
- 1 tsp coriander powder
- Salt, to taste
- Fresh coriander leaves, chopped (for garnishing)

Instructions:
- Wash the moong dal thoroughly under running water till the water runs clear. This removes all the dust or impurities.
- Add the washed moong dal and 3 cups of water in a vessel. Bring to a boil and then reduce the heat. Cook uncovered for about 20 minutes or until the dal is soft. You can also use a pressure cooker for faster cooking (about 2-3 whistles).
- In a separate pan, heat oil or ghee on medium heat. Add mustard seeds or cumin seeds and let them crackle. Now add asafoetida.
- Add chopped onions and sauté till golden brown.
- Add finely chopped garlic, grated and green chilies and mix well. Saute for another minute until aromatic.
- Add chopped tomatoes, turmeric powder, red chili powder, coriander powder and salt. Cook till the tomatoes are cooked and oil separates from the mixture.
- Once the moong dal is cooked, add it to the tempering mixture. Mix well. Reduce the thickness by adding more water if needed and let it cook on low heat for 5-10 minutes.
- Garnish with chopped fresh coriander leaves. Serve hot, enjoy with rice or roti.
