It is also served as a dessert at winter weddings. Today, we bring you the recipe for carrot halwa (Gajar Ka Halwa Recipe), which is ready in just one hour. Let's know the complete method of making this delicious halwa (Gajar Ka Halwa Recipe) made from carrots, ghee, sugar, milk, and cardamom powder.


Ingredients:

1 kg fresh carrots

1-liter full-fat milk

150 grams sugar

1/2 cup ghee

1/4 cup dry fruit mix (cashews, almonds, raisins and pistachios)

7-8 saffron strands

1/2 teaspoon cardamom powder

1/4 teaspoon orange/red food color (optional)

Instructions:

First of all, wash all the carrots with clean water. Now grate the carrots well with a food processor.

Heat the milk in a pan till it boils. And keep it aside.

Heat ghee in a large, heavy pan. Now add chopped dry fruits and fry for 10-15 seconds and then remove and keep aside. Now add all the grated carrots and fry. Fry well on high flame for 5 minutes. Now reduce the flame to medium and let it cook for 10-15 minutes.

Now after 15 minutes when the carrots are lightly cooked, add all the milk to it and let it cook on open flame for 20-25 minutes.

When all the milk dries up, add food color, cardamom powder and saffron strands to it. Now add roasted dry fruits to it. Mix everything well. Let it cook for 5 more minutes.

Now finally add sugar to it and mix. Keep stirring on high flame till the sugar melts. Let it cook for 2 minutes. Now turn off the gas. If you want, you can serve it hot. If you like cold halwa, you can also serve it cold.


Note:

You can reduce or increase the amount of sugar as per your choice. If you can add sugar then add it at the end, it makes the halwa soft.

It is your choice whether to add food colour or not.
