Ingredients:
300 grams of ladyfinger
2 medium-sized potatoes
3-4 tablespoons oil (mustard oil)
1/2 teaspoon mustard
1/2 teaspoon cumin seeds
A pinch of asafoetida
1-2 chopped chilies
1/2 tablespoon ginger-garlic paste
1/4 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/2 teaspoon coriander powder
1 tablespoon lemon juice
Green coriander for decoration
Salt to taste

Instructions:
First of all, wash all the ladyfingers 1-2 times with clean water. After this, clean all the ladyfingers with a dry cloth and cut it into 1-inch pieces.
Now peel the potatoes and cut them into big pieces and wash and keep aside.
Now heat 3-4 tablespoons of oil in a pan. Now add mustard seeds and cumin seeds and let them crackle. After this, add asafoetida.
After this, add chopped green chilies and ginger-garlic paste and fry well. Now add chopped potatoes and cook on a low flame for 5 minutes. Keep stirring in between so that they do not burn.
After 5 minutes, when the potatoes are 80% cooked, add ladyfinger to it. Now cook it on a low flame for 10-15 minutes.
Now, when the potatoes and ladyfinger are cooked well, we will add all the Indian spices to it. Add turmeric powder, red chili powder, and coriander powder, and mix everything well.
Finally, add salt as per taste and mix, and garnish with green coriander.
Aloo Bhindi recipe is ready to serve. You can serve it with parathas or chapatis. The taste of Aloo Bhindi ki Sabzi increases even more with dal rice.
Note:
If you want, you can also make this vegetable by lightly frying potatoes and bhindi. If you use mustard oil to make it, it will also taste amazing.
Add salt at the end. If you add salt earlier, then the bhindi ki sabzi can become sticky.
You can increase or decrease the amount of spices as per your convenience. You can also eat this dish with onion parathas. This is a great combination.
