But today we have brought you such a pumpkin vegetable recipe that if you make it once and feed it to your children and family members, they will ask you to make it again and again. This vegetable is usually made in bhandara and served with hot puri. So let's know the complete recipe for making pumpkin curry (Kaddu Ki Sabji).
Ingredients:
500 grams of pumpkin
1 tablespoon oil
2-3 green chillies, finely chopped
3-4 garlic cloves
1/2-inch ginger
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
A few curry leaves
1/4 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/2 teaspoon coriander powder
Salt to taste
Green coriander for garnishing

Instructions:
Firstly, peel the pumpkin and remove its seeds and pulp, and cut the remaining part into small pieces. Wash it with clean water and keep it aside.
Now heat a pan and add oil to it. When the oil is hot, add mustard seeds, cumin seeds, and curry leaves and let them crackle.
Now add green chilies to it. Now add coarsely chopped garlic and ginger and fry.
Now add chopped pumpkin and mix well. Cover and let it cook for 6-7 minutes. Pumpkin will start releasing water, so keep stirring in between.
When the water dries up a little, add turmeric powder, red chili powder, coriander powder and salt as per taste, mix well and cook for 2 minutes.
If the pumpkin is cooked well, turn off the gas and garnish with curry leaves.
Finally, market bought pumpkin ki sabzi is ready, serve it hot with roti or paratha.
