Here's how you can make it:


Ingredients:

- 1/2 cup basmati rice

- 4 cups full-fat milk

- 1/2 to 3/4 cup sugar (to taste)

- 1/4 teaspoon cardamom powder

- A pinch of saffron strands (optional)

- 2 tablespoons chopped nuts (e.g., almonds, pistachios)

- 2 tablespoons rose water or kewra water (optional)

- A few more nuts for garnish


            Punjabi Style Phirni/Firni


Instructions:

- Wash the basmati rice under running water until the water runs clear. Soak the rice in water for about 2-3 hours. After soaking, drain the water from the rice.

- After soaking the rice, add a little water if needed and grind it coarsely. The texture should be fine but not too greasy.

- In a heavy-bottomed pan, bring the milk to a boil. Stir occasionally to prevent it from sticking to the bottom.

- Once the milk comes to a boil, reduce the heat and add the ground rice to the boiling milk. Stir constantly to avoid lumps.

Cook the mixture over low heat until it thickens, stirring frequently (about 15-20 minutes). When it begins to thicken, add the sugar, cardamom powder, and saffron. Stir well until the sugar dissolves completely.

- If using, add rose water or kewra water for a richer fragrance. Mix well.

- Remove from heat and let cool slightly. Transfer the phirni to individual serving bowls or cups.

- Garnish with chopped nuts and refrigerate for at least 2-3 hours. It can be served cold or at room temperature.
