Instructions:
- 1 cup wheat flour
- 1/2 cup ghee
- 1/2 cup powdered sugar (to taste)
- 1/4 cup finely chopped nuts (almonds, cashews, pistachios)
- 1/4 cup grated coconut (optional)
- 1 tsp green cardamom powder
- 1/4 cup raisins
- A pinch of salt
- 1 tbsp poppy seeds (optional)

Instructions:
- In a heavy-bottomed pan, heat ghee over low heat. Once hot, add the wheat flour. Stir constantly to avoid lumps and fry until golden brown and nutty. This will take about 10-15 minutes.
- Once the flour is roasted, add the chopped nuts and grated coconut (if using). Stir well for 2-3 minutes, until lightly toasted.
- Remove the pan from the heat and let the mixture cool slightly. Once hot, add powdered sugar, cardamom powder, raisins, and a pinch of salt. Mix everything well.
- While it's still hot, take small portions of the mixture and shape them into small balls or cylinders. If the mixture is too dry, you can add a little more ghee.
- Let the panjiri cool completely and then store it in an airtight container.
- Enjoy your nutritious Panjiri as a snack or energy booster! It can be stored for several weeks.
