Ingredients:
1 liter full-fat milk
1/2 cup sugar (to taste)
2 tablespoons ghee
1/4 teaspoon cardamom powder
10–12 cashews and almonds, chopped
8–10 raisins
A few saffron strands (optional)

Instructions:
Boil the milk:
Pour the milk into a heavy-bottomed pan or kadai. Bring it to a boil, then reduce to a simmer over low to medium heat, stirring occasionally to prevent sticking.
Reduce the milk:
Continue cooking the milk, stirring constantly, until it thickens and reaches a rabri-like consistency (granular and about 1/4 the original volume). This may take 40–50 minutes.
Add sugar and ghee:
Add sugar and ghee. Mix well, and continue cooking and stirring. The mixture will become slightly loose after adding the sugar; keep stirring until it thickens again.
For Flavor:
Add cardamom powder and saffron strands (if using). Mix well.
Add Nuts and Raisins:
Add chopped cashews, almonds, and raisins and mix. Cook for 2-3 minutes.
Serve:
Serve hot or cold, garnish with more nuts if desired.
