Ingredients:
3 large ripe bananas (preferably the Nendran variety)
1 cup sugar (adjust to taste)
3–4 tablespoons ghee (clarified butter)
1/2 cup water
1/4 teaspoon cardamom powder
8–10 cashews, chopped
8–10 raisins

Instructions:
Prepare the bananas:
Peel and chop the bananas. Mash or blend them into a smooth puree.
Cook the bananas:
In a heavy-bottomed pan, heat 1 tablespoon ghee. Add the banana puree and cook over medium heat, stirring constantly, for 5–7 minutes, until the raw smell disappears.
Add sugar:
Add sugar and water. The mixture will become loose and shiny. Continue stirring over medium-low heat.
Slowly add ghee:
While cooking, add the remaining ghee intermittently. Stir frequently to prevent sticking and burning.
Cook until thickened:
Continue cooking and stirring until the halwa starts to separate from the sides of the pan and becomes glossy and thick (about 20–30 minutes).
Flavors and nuts:
Add cardamom powder, chopped cashews, and raisins. Stir and cook for another 2–3 minutes.
Set the halwa (optional):
You can transfer the halwa to a greased plate, spread it evenly, and let it cool. Once set, cut it into pieces, or simply serve it hot in a bowl.
Tips:
Use very ripe bananas for the best flavor and sweetness.
Adjust the sugar according to the sweetness of your bananas.
More ghee gives a richer texture, but you can reduce it slightly if you prefer.
