250 grams fresh ginger (raw and tender)
2 cups sugar
1 cup water
1 tablespoon lemon juice
1/2 teaspoon cardamom powder
1/4 teaspoon black salt (optional)

Instructions:
Peel the ginger and cut it into thin, uniform pieces.
Soak the ginger pieces in water overnight to reduce their pungency. Drain the water and rinse them thoroughly before use.
Combine the sugar and water in a saucepan. Bring the mixture to a boil, stirring continuously until the sugar has completely dissolved.
