Every cuisine in India has its own specialty, whether it is North Indian or South Indian. Today we have brought for you Medu Vada recipe, which is a traditional South Indian dish that is a popular snack served with coconut chutney and sambar. This crispy fried snack is made from a balanced mixture of urad dal, cumin seeds, black pepper, curry leaves, and green chillies. If you learn to make the Medu Vada batter correctly, then it is not difficult to make hotel-like vadas at home. You will easily find all the ingredients required to make it in your kitchen. To make the best medu vada, before making the medu vada, be sure to know about its preparation method and the ingredients used in it.
Ingredients:
- 1 cup urad dal
- 2 green chillies (finely chopped)
- 1 inch ginger (finely chopped)
- Few curry leaves (finely chopped)
- 2 tbsp coriander leaves (finely chopped)
- 1 tbsp dry coconut (chopped)
- Pinch of asafoetida
- 2 tbsp rice flour
- ½ tsp salt
- Oil (for deep frying)

Instructions:
- Firstly, wash 1 cup of urad dal and soak it in enough water in a large bowl for 3 hours. Do not soak for too long, as the vada will absorb oil.
- Drain the water and prepare a smooth paste of urad dal by adding 4 tbsp of water in a mixer. Add ¼ inch ginger, a few curry leaves, 2 tbsp coriander leaves, 1 tbsp dry coconut, a pinch of asafoetida, 2 tbsp rice flour, and ½ tsp salt, and mix well.
- Put the urad dal paste in a large mixing bowl. Beat the batter with your hands and keep rolling in circles until the balls become light. Remember to roll the batter in circles as this entraps air in the batter and makes the medu vada soft and fluffy. You can also break the batter with a spoon if you want.
- Heat oil in a large pan. Wet your hands with enough water and take a small ball-sized dough and roll it into a circle. Now, make a thin shape at the edges and make a hole in the center like bread vada.
- Drop the vada in the oil and fry the vada on a medium flame. Fry till it becomes golden brown and crisp on both sides.
- Finally, serve hot medu vada prepared in a mixer with coconut chutney or sambar.
