Tamarind Chutney: Imli ki Chutney


Sweet and sour tamarind chutney: If you get tamarind chutney with any dish, then the taste of the food increases even more. Be it any breakfast, there is no fun in eating without chutney. It feels as if something is missing. If you get to eat tamarind chutney, then its sour-sweet taste makes the tongue spicy and delicious. The specialty of this tamarind chutney is that if it is made once, it can be kept in the fridge for many days. This enhances the taste even more.

Apart from tamarind and jaggery, some spices are also used to make tamarind chutney. If you also want to make tamarind chutney with a market-like taste at home, then we are going to tell you an easy way to make it. It can be served with samosas, chaat, pakoras, and other cooked food.


Ingredients:

- 2 cups water

- 1 cup tamarind (fresh or dried, both will work)

- 1 cup sugar/jaggery

- 1 tsp fennel powder

- 1/2 tsp cumin powder

- 1/2 tsp red chili powder

- 1 tsp dry ginger powder

- Black salt to taste

- Salt to taste

Instructions: 

- Firstly, boil tamarind in 2 cups of water. When it becomes soft, let it cool and then filter it through a sieve to extract the tamarind juice.

- Now, in a pan, add tamarind juice, sugar/jaggery, dry ginger, fennel powder, black salt, salt, cumin powder, and red chili powder. Cook on a low flame.

- Keep cooking the chutney slowly, till it thickens a bit. Keep mixing it well so that all the spices are mixed well. Once the chutney is ready, cool it and serve.

- Tamarind chutney is ready. Once cooled, store it in a jar and refrigerate it and enjoy with your favorite dishes like samosas, tikkis, bhel puri, and pakoras. You can store it for months.


Note:

- Cook the tamarind well till it becomes soft so that the juice comes out easily.

- This chutney can be stored in a jar and refrigerated.

- If you don't want to boil it in water, you can also extract the pulp by soaking it in 2 cups of hot water for half an hour and then mashing it well in a sieve. Neither method will not change the taste.
