Ingredients:
1 cup gram flour
1 medium-sized onion, finely chopped
1 medium-sized tomato, finely chopped
2-3 green chilies
3-4 garlic cloves
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
A pinch of asafoetida
1/2 teaspoon turmeric powder
Salt to taste
2 tablespoons oil
Chopped coriander leaves
Water as needed

Instructions:
First, heat oil in a pan. Add mustard seeds and asafoetida and let them crackle. Then add garlic or green chilies and lightly fry.
Now add chopped onions and fry until translucent.
Next, add chopped tomatoes and cover and cook for 2 minutes until softened.
Now, add turmeric powder, red chili powder, salt to taste, or a cup of water to one cup of gram flour and whisk well. Be sure to avoid lumps.
Now, pour this mixture into a pan and cook over low heat until thickened. This will take 5-7 minutes.
Now, Traditional Maharashtrian-style Pitla is ready to serve. Serve it with hot millet roti and sprinkle a spoonful of raw oil and chopped onions on the Pitla.
