Ingredients
For the stuffing:
3 tsp oil
Pinch of asafoetida
½ tsp cumin seeds
½ tsp coriander seeds
½ tsp fennel seeds
½ tsp black pepper
½ tsp ginger paste
1 chilli (finely chopped)
2 onions finely chopped
1-2 boiled potatoes (finely mashed)
¼ tsp red chilli powder
¼ tsp turmeric powder
½ tsp garam masala
¼ tsp sugar
½ tsp salt
¼ cup gram flour
2 tbsp coriander leaves (finely chopped)
For the dough:
2 cups all-purpose flour
1/2 tsp carom seeds
▢½ tsp salt
2 large tbsp ghee/oil
water (for kneading)

Instructions
How to make Pyaaz Kachori dough:
- Firstly, take 2 cups all-purpose flour, ½ tsp ajwain, 1 tbsp oil and ½ tsp salt and mix well. Then, add water little by little and make a dough. Knead it well till it becomes smooth and soft.
- Next, apply 1 tsp oil on the dough. Cover with a damp cloth and keep aside for 20-25 minutes.
How to make Pyaaz Kachori stuffing:
- Take 3 tsp oil in a pan and coarsely grind ½ tsp cumin seeds, ½ tsp coriander seeds, ½ tsp fennel seeds and ½ tsp black pepper. Now add a pinch of asafoetida to the pan and add the crushed masala and fry till it gives a mild aroma. Now add 1 finely chopped green chili and ½ tsp ginger paste and saute lightly.
- Next, add 2 finely chopped onions and saute till their color changes slightly.
- Now add 1-2 mashed boiled potatoes and mix. Keeping the flame low, add ¼ tsp turmeric powder, ¼ tsp red chili powder, ½ tsp garam masala, ¼ tsp sugar and salt as per taste. Saute on a low flame till the aroma comes. Mix everything well. Adding sugar will balance the taste of all the spices.
- Next, add ¼ cup of gram flour and saute well. Add 2 tbsp coriander leaves and mix well. Finally, the onion stuffing is ready. Let it cool completely.
How to make Pyaaz Kachori:
- Now take a small dough ball and flatten it and roll it a little. Prepare small balls of onion stuffing. Now, place a dough ball in the rolled puri and join the edges well. And press it from the top to flatten it. Press the edges a little and give it the shape of a puri. Prepare all the kachoris one by one by following the same process.
- Now, when the oil for frying in a pan becomes medium hot, add the prepared kachoris to it. Now fry it on medium flame only. Fry till it becomes golden brown on both sides. Keep in mind that the kachoris do not burn.
- Finally, serve the onion kachori with green chutney and tamarind chutney.
- You can also serve it as kachori chaat. Just like the samosa chaat recipe, you can also make kachori chaat.
