Aloo Puri is a popular Surati Street food that chaat lovers will surely love! It is served with small maida puris, topped with white peas ragda, chaat masala, onions, and sev. All these ingredients make it a wonderful dish. We can easily make it at home as well. All the ingredients used in it are easily available in the kitchen. Ingredients
For Puri:
1 cup all-purpose flour
1 tsp oil
1 tbsp/salt to taste
Water as required
Oil as required for frying
For making Ragda:
1/4 cup boiled potatoes
1/4 cup boiled dried yellow peas (soaked for 6-7 hours)
1/2 tsp turmeric powder
1/2 coriander powder
1/2 garam masala
2 tsp oil
Salt to taste
For Kokum Chutney:
1/2 cup kokum soaked in hot water (about 1 hour)
1 tsp red chilli powder
1 tsp coriander-cumin powder
Salt to taste
Water as required (keep the chutney thin)
For garnishing:
1/4 cup finely chopped onions
1/2 cup green chutney
3 tsp aloo bhujia/ spicy sev
2 tsp garlic farsan (optional)
2 tsp broken papdi (optional)
Finely chopped coriander leaves as required

Instructions:
First of all, to make maida puri, take 1 cup flour in a bowl. Add oil and salt to it and knead a soft dough by adding appropriate amount of water. Roll out thin small puris and fry them in oil. The puris have to be kept soft, not crispy.
To make ragda, heat oil in a pan. Add boiled potatoes and peas to it and add water, salt, turmeric powder, coriander powder and garam masala as per requirement. Let it boil. Keep in mind that the ragda should not be too thin and not too thick.
For kokum chutney, soak kokum in hot water for an hour. (Please note that we have to use only soft kokum.) To make chutney, mix kokum, salt, turmeric, coriander-cumin powder and water and grind it in a mixer. You add water as per requirement and now kokum chutney is ready. This chutney will be sour in taste.
To make Aloo Puri, take 7-8 Puri in a serving plate, then put Ragda on it, add green chutney and kokum chutney, finely chopped onions, coriander leaves and spicy sev and serve. You can also add garlic farsan and broken papdi on it. This will enhance its taste even more.
