Ingredients:
2 cups raw rice
1/2 cup urad dal
1 tbsp fenugreek seeds
1/4 cup thick poha
Water as required
Oil for greasing

Instructions:
First of all, wash rice and urad dal thoroughly 2-3 times in a bowl with clean water.
After this, fill half a bowl of water in it. Add rice, urad dal or fenugreek seeds in it and soak it for 4-5 hours.\
Now after 4-5 hours, grind it little by little and put it in the mixer jar. Add water as needed and grind it. Now add soaked thick poha to it and make a fine paste.
Mix all the things well. Now keep it aside for fermenting for 10-12 hours.
After 10-12 hours, when the idli batter is well fermented, stir it once with a spoon
Now separate the batter according to your requirement. Now add salt and baking soda/Eno as per taste and mix well.
Now heat 1-2 glasses of water in the idli vessel. Keep the flame medium.
Now apply oil on the idli mould and pour some batter in it. And steam it for 10-12 minutes. Now with the help of a wet spoon, separate it from the idli mould and take it out in a serving plate. Idli gets easily separated from the mould with a wet spoon.
There you go, your soft and fluffy idli is ready. Serve it with hot vegetable sambar and coconut chutney.
