Ingredients:
1 cup fine semolina
1/4 cup sour curd
1/4 cup water + 1 tbsp water
1 tbsp oil
1 tbsp green chili and garlic paste
1-2 tbsp onions (finely chopped)
1-2 tbsp tomatoes (finely chopped)
1-2 tbsp carrots (finely chopped)
1-2 tbsp capsicum (finely chopped)
1-2 tbsp crushed peas
Coriander leaves for garnishing
1 tsp baking soda/ Eno
1 tsp sugar
Salt to taste
For tempering:
2-3 tbsp oil
1 tsp mustard seeds
1 tsp cumin seeds
A few curry leaves
1 tbsp lemon juice

Instructions:
Firstly, add semolina, curd and water in a bowl and mix well.
Keep it aside for 15-20 minutes. (We have to use fine semolina here. If you are using coarse semolina, then grind it and use it.)
Now put water to boil in a vessel to cook the dhokla in steam.
After 20 minutes, add all the chopped vegetables like onion, carrot, tomato, capsicum or crushed peas to the dhokla batter and mix well. After this, mix salt, sugar, oil, green chilli and garlic paste well.
Now add Eno to it and add one tablespoon water and mix well.

Now apply oil on a plate and take out the batter in the plate. Tap it gently so that the batter sets well.
Now put it in a pan on medium to high flame to cook in steam. Cook in steam for 12-15 minutes.
After 15 minutes, check with the help of a knife or toothpick. If the knife/toothpick comes out clean, then the dhokla is cooked. Now turn off the gas and let the dhokla cool down.
When cooled, cut it. Now for tempering, heat oil in a pan. Add cumin seeds and curry leaves and let them crackle. Now add lemon juice, mix and pour it over the chopped vegetable dhokla.
There you go, your instant vegetable semolina dhokla is ready. Garnish it with coriander leaves and serve with green chutney or coconut chutney.
Note:
You can also eat it by spreading raw oil or sprinkling Kashmiri red chilli powder. It tastes very delicious. Apart from this, you can also eat it with tomato ketchup.
You can also use your favorite vegetables in it. If you like yellow dhokla, then add 1/2 tsp turmeric powder to it.
