Instructions:
First, wash the okra thoroughly and dry it with a cloth. Cut off the top and bottom. Cut the okra in half so that the filling can be contained within. Be careful not to cut the okra into two pieces.
Lightly fry the gram flour in a pan. Transfer it to a plate and let it cool.
Next, add turmeric powder, red chili powder, coriander powder, cumin powder, mango powder, and salt and mix well.
Now, fill the chopped okra with the prepared spices one by one. Fill all the okra.
Heat oil in a pan. Add cumin seeds and asafoetida and let them crackle. Add garlic and fry lightly.
Now, add the stuffed okra, mix, cover, and cook on low heat for 5-7 minutes. Stir occasionally to prevent the okra and masala from burning.
Finally, the Stuffed Okra Curry is ready. You can serve it with hot Phulka, roti or paratha.
