Dudhi Muthiya | Dudhi Na Muthiya | Gujarati Style Dudhi Na Muthiya | How to Make Dudhi Ke Muthiye | If you're looking for a light breakfast, this recipe is for you. Today's recipe is Dudhi Muthiya, also known as Dudhi Naa Muthiya in Gujarati. Grated Dudhi is mixed with some spices and wheat flour to form a dough. It's steamed and then tempered with mustard seeds and cumin seeds. This is how Dudhi Muthiya is prepared. It takes about half an hour to prepare. So, let's learn the complete recipe for Lauki Muthiya/Doodhi Muthiya.
Ingredients:
500 grams of dudhi (grated)
2 cups wheat flour
1/4 cup semolina
1/2 cup gram flour
1 tablespoon each of green chili, ginger-garlic paste
1/2 teaspoon carom seeds
1/2 teaspoon fennel seeds
1 tablespoon sesame seeds
1 tablespoon lemon juice
1 tablespoon sugar
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
Salt to taste
Chopped coriander leaves
1 tablespoon oil
Water as needed
For tempering:
2 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
A few curry leaves
Salt to taste
Chopped coriander leaves for garnishing

Instructions:
First, drain the excess water from the boiled bottle gourd and transfer it to a plate.
Now, add wheat flour, ground sesame seeds, semolina, turmeric powder, red chili powder, coriander powder, salt to taste, carom seeds, sesame seeds, fennel seeds, lemon juice, and coriander leaves, and mix well.
Add water as needed; you can use the extra water for the bottle gourd instead of the regular water.
Knead into a soft dough. Apply oil and let it rest for 5 minutes.
Next, form medium-sized balls from the dough and shape them into cylindrical balls. Prepare the muthiyas in the same way.
Cook them in a steamer over high heat for 25-30 minutes.
When cool, cut them with a knife.
For the tempering, heat oil in a pan. Add cumin seeds and asafoetida and let them crackle. Add curry leaves as well.
Add a little salt, mix well, and then add the chopped muthia.
Finally, garnish with coriander leaves.
Finally, the Lauki Muthia are ready. Enjoy them with tomato ketchup or hot tea.
