Although Dahi Vada Recipe is made all over India, the taste of Dahi Vada Recipe made in Halwai style is unique. To make them extra soft and spongy, the urad dal batter is hand whipped for a while before making the Vada. Badas are made in oil from the whipped batter, and after frying the Badas are soaked in water. Badas are dipped in whipped curd and red chilli powder, roasted cumin powder and sweet chutney is sprinkled on top and garnished with green coriander which not only enhances the taste but also makes it attractive to look at. So, without wasting time, we will learn the method of making Dahi Bhalla and Dahi Vada.
Ingredients
For the vada:
1 cup urad dal
1 tsp salt
½ tbsp ginger or chilli paste
Oil (for frying)
For soaking:
5 cups lukewarm water
For sweet curd:
2 cups curd (fresh and thick)
2 tbsp sugar
½ tsp salt
For serving:
Red Chilli powder
Roasted cumin powder
Chaat masala
Coriander leaves (finely chopped)

Instructions
How to make vadas for Dahi Bhalla:
- Firstly, soak 1 cup of urad dal for 5-6 hours.
- Drain the water and put it in the mixer. Also, add 1 chilli and 1 inch ginger paste. Add water as required and make a smooth paste. Keep in mind that the dough should be smooth. Do not add more water than required. Finally, take out the urad dal batter in a large bowl.
- After making a soft paste of urad dal, take it out in a bowl, add 1 tsp salt and mix well. Prepare a thick batter. If the batter looks watery, add a tablespoon of rice flour.
- Now heat the oil in a pan. Once the oil is hot, turn the flame to medium. Now whisk this soft batter with your hands. And make small balls and put them in the oil. Fry them till they turn light golden brown. Now take out the vada on a kitchen paper to drain out the excess oil from it.
- Now, take 5 cups of lukewarm water in a large bowl.
- Add half a tsp salt. Mix well and make sure it is well incorporated. Now put the hot fried vada in the water and let it submerge completely.
- Let it soak for 15-20 minutes or till the vada absorbs the water. After 15-20 minutes, hold the vada with hands and squeeze to remove excess water and transfer it to a plate.
How to prepare sweet curd for Dahi Vada recipe:
- Firstly, take 2 cups thick curd, 2 tbsp sugar and ½ tsp salt.
- Whisk well and mix well, making sure everything is well combined.
How to assemble Dahi Bhalla:
- Firstly, pour sweet curd over the vada. Now add 2-2 tsp green chutney and tamarind chutney. Sprinkle red chilli powder, roasted cumin powder or chaat masala. Sprinkle coriander leaves on top.
- Finally, enjoy chilled Dahi Vada or Dahi Bhalla.
