To make it (Vegetable cutlet recipe), boiled potatoes are mixed with your favorite vegetables, coated with breadcrumbs, and fried. This is a (Vegetable cutlet recipe) dish that takes less time to prepare and can be prepared and served in breakfast or evening, or even at children's birthday parties. So let's know the complete method of making it (Vegetable cutlet recipe).
Ingredients:
2-3 boiled potatoes, peeled
1/2 cup poha
1/4 cup breadcrumbs
1/4 cup all-purpose flour (Maida)
2-3 tbsp corn flour
1/4 cup finely chopped onion
1/4 cup cabbage, finely chopped/grated
1/4 cup finely chopped capsicum
1/4 cup sweet corn
1/4 cup carrot, finely chopped/grated
1/4 cup beetroot, finely chopped/grated
1/2 tbsp green chilli and ginger paste
1/2 tsp cumin seeds
1/2 tsp red chilli powder
1/2 tsp coriander powder
1/4 tsp turmeric powder
1/4 tsp garam masala
1/4 tsp pav bhaji masala
Salt to taste
1-2 tbsp lemon juice
Oil for frying + 2-3 tbsp for tempering
Coriander leaves for garnishing
Water as needed

Instructions:
1. First of all, wash the poha with clean water and remove the excess water. Make sure that there is some moisture in it so that it mixes well with the mixture.
2. Now heat 2-3 tbsp oil in a pan. Now add cumin seeds and let them crackle, after this add green chili and ginger paste and fry.
3. Now add onion and fry well till it becomes transparent. After this add all the chopped vegetables (cabbage, capsicum, carrot, beetroot, sweet corn) or poha and mix well.
4. Now add kitchen spices like turmeric powder, red chili powder, coriander powder, garam masala and pav bhaji masala and mix.
5. After mixing everything well, add salt as per taste, mix well and let it cook for 2 minutes. Now turn off the gas and keep it aside to cool down a bit.
6. Now take flour in a bowl. Add some water and salt to it and make a thin paste. Now take out breadcrumbs in a bowl as well.
7. Now when the mixture cools down, take it out in a bowl or plate. Now mash the boiled potatoes, add lemon juice and coriander leaves and mix well.
8. Now apply oil on your hands and make small balls of the mixture. Give them any shape of your choice. Round, square, triangle, heart-shaped, oval etc. Or you can also use the cutlet mold available in the market.
9. Prepare all the cutlets. Now dip each cutlet one by one in the flour solution, then dip in breadcrumbs and deep fry.
10. Keep in mind that the oil in the pan should be on medium to low flame, otherwise the cutlets may break or even burn.
11. Dip all the cutlets one by one in the flour solution, wrap them in breadcrumbs, and fry.
12. Now your Veg Cutlet Recipe is ready to serve. You can serve it with mint chutney, tamarind chutney, or tomato sauce.
Note:
- You can use vegetables of your choice in it.
- If you want, while making cutlet balls, you can add cheese cubes to them and give them a shape, which will make them cheese cutlets.
- If you do not like fried cutlets, then you can fry them in a pan by applying 1-2 tablespoons of oil till it become golden brown on both sides.
