Ingredients:
3 medium-sized capsicum, chopped into cubes
2 medium-sized potatoes, chopped into cubes
1 medium-sized onion, finely chopped
1 large tomato, finely chopped
1-2 green chillies, chopped
1 tbsp ginger-garlic paste
1/2 tsp mustard seeds
1/2 tsp cumin seeds
A pinch of asafoetida
1 tsp coriander powder
1 tsp red chilli powder
1/2 tsp turmeric powder
Salt to taste
2 tbsp oil
Coriander leaves for garnishing
Capsicum or Potato ki Sabji |
Instructions:
Firstly, heat the oil in a pan. After the oil is heated, add mustard seeds and cumin seeds and let them crackle. Now add asafoetida and fry.
After this, add green chillies and ginger-garlic paste and fry lightly. Now add onions and cook till they become translucent.
After the onions are cooked, add potatoes and cook for 5 minutes. After 5 minutes, add tomatoes and capsicum and mix everything well and cook for 5-7 minutes. Cook everything on low flame.
After all the vegetables are cooked, add turmeric powder, coriander powder, red chili powder and salt as per taste and mix well.
Now turn off the gas. Garnish with green coriander.
There you go, your Capsicum Potato Sabzi is ready. You can serve it with hot roti, paratha or dal rice.
