Ingredients:

2 cups basmati rice (cooked)

2-3 medium-sized fresh tomatoes, finely chopped

1 medium-sized onion, finely chopped

1 tablespoon ginger-garlic paste

2-3 green chillies, finely chopped

Some curry leaves

8-10 cashew nuts (optional)

1 bay leaf

1 inch of cinnamon

2 black cardamoms

2-3 cloves

1/2 teaspoon mustard seeds

1/2 teaspoon cumin seeds

1/4 teaspoon asafoetida

1 teaspoon Kashmiri red chilli powder

1 teaspoon coriander and cumin powder

1/2 teaspoon turmeric powder

Salt to taste

2 tablespoons ghee

Green coriander leaves chopped

Instructions:

First of all, heat the ghee in a pan. Now add cumin seeds and asafoetida and let them crackle.

Now add whole spices (cinnamon, cloves, bay leaves, big cardamom).

After this, add the onion and fry it lightly. Once the onion is fried, add green chilies and ginger-garlic paste.

Now, when everything is cooked well, add chopped tomatoes and cashews. Mix, cover, and cook for 5 minutes.

After 5 minutes, when the tomatoes are cooked, add turmeric powder, coriander powder, and red chili powder and mix well. Also, add salt. Let it cook for 2 minutes.

Now add cooked basmati rice, mix everything well and cook for another 2 minutes; also add coriander leaves. Now turn off the gas.

Finally, Tomato Pulao is ready. Serve it hot. Do not forget to serve raita with it.


Note:

You can also make this recipe with leftover rice.
