Instructions:

1. Prepare the greens:

- Wash the Hak leaves thoroughly under running water to remove all dirt. Remove the thick stems and roughly chop the leaves.

2. Heat the oil:

- Heat the mustard oil in a large pan until it starts to smoke slightly. Reduce the heat to medium.

3. Sauté the onions and spices:

- Add the chopped onions to the pan and sauté until golden brown. Then, add the finely chopped garlic, grated ginger, and slit green chilies. Sauté for another minute until fragrant.

4. Add the spices:

- Add the turmeric powder, red chili powder (if using), and salt. Mix well.

5. Cook the greens:

- Add the chopped Hak leaves to the pan. Stir to combine with the onions and spices. Add a little water to help the greens cook (about 1/4 to 1/2 cup should be enough). Cover the pan and cook on low heat for about 10-15 minutes, or until the leaves are tender.

6. Finishing touches:

- Stir occasionally and check the consistency. It should be slightly saucy, not too watery. Adjust salt and spices if needed.

7. Serve:

- Once cooked, serve hot with rice or roti. Enjoy your Hak Saag as a nutritious side dish!

You can adjust the spices according to your preference!
