Sev Tomato Sabzi | How to Make Sev Tomato Sabji, sev tomato is a very popular Gujarati recipe made with tomatoes, sev, onions and other Indian spices. Whenever we go out of town, we always include this sabzi in our lunch or dinner. This recipe is very easy to make as tomatoes and onions are sautéed in oil and cooked with little water and finally Indian spices and sev are added. So, make this recipe today and serve it with parathas, raita, and buttermilk for lunch or dinner.


Ingredients:

3-4 medium-sized red ripe tomatoes, chopped

1/2 cup nylon sev or thick sev (of your choice)

1/2 tsp cumin seeds

1/4 tsp mustard seeds

Pinch of asafoetida

1 medium-sized onion, finely chopped

1 tsp ginger-garlic paste

1-2 green chillies, finely chopped

2 tsp sugar/jaggery

1/2 tsp red chilli powder

1/4 tsp turmeric powder

1 tsp coriander powder

1/4 tsp garam masala powder

2 tbsp finely chopped coriander leaves

2 tbsp oil 

Salt to taste

1/2 cup water


 Restaurant Style Sev Tomato Sabji


Instructions:

- Heat oil in a pan on medium flame. Add mustard seeds and cumin seeds, when mustard seeds crackle, add chutney full of asafoetida, chopped onion and fry till light brown. Add ginger-garlic paste and chopped green chilies and fry for 15-20 seconds. Make a fine paste of tomatoes and add it and fry for a minute. You can also add chopped tomatoes if you want.

- Now add salt and turmeric powder as per taste. Mix well and cook on medium flame for 2-3 minutes. Now add red chili powder, garam masala powder, coriander powder and cook tomato puri for about 4-5 minutes. Keep stirring in between. Add half a cup of water and mix well. Cook for 1-2 minutes. Turn off the gas. Now add sev and mix and garnish with green coriander.

Sev Tomato Sabzi is ready to serve. Serve it hot with chapati or paratha. You can also have it with raita or buttermilk.


Note:

- Adding sev before serving will keep the crispiness of sev intact. If you add sev earlier, it will become soft. Now you can choose the texture of the sev as per your liking.

- If you want more gravy, add more water as the sev will absorb more water. You can also add fresh cream to it, which will enhance its taste.

- To make the curry more or less spicy, add red chili powder and green chilies as per your liking.
