It is known as Khandvi in Gujarat and Patodi in Maharashtra. It takes less than 30 minutes to make it. The main ingredients to make it are buttermilk and gram flour. So, let's know how to make Khandvi/Patodi.
Ingredients:
1 cup gram flour
2 ½ cups sour buttermilk
½ tsp turmeric powder
Salt to taste
For tempering:
1-2 tbsp oil + oil for greasing
½ tsp mustard seeds
½ tsp cumin seeds
½ tsp sesame seeds
Few curry leaves
1-2 tbsp grated coconut
Coriander leaves for garnishing

Instructions:
First of all, mix gram flour, buttermilk, salt, turmeric powder well in a bowl.
Now place a sieve in a thick bottomed vessel and filter it well. Now heat the vessel on medium to high flame.
Now keep stirring this solution continuously so that it does not stick to the vessel.
Keep stirring this solution till it starts leaving the vessel. It takes about 7-8 minutes.
When it starts leaving the vessel, to check it, spread it a little on the back of the plate and try to make a roll. If the roll is being made easily, then it is cooked. If not, cook it for 1-2 minutes more.

Now take a plate, apply oil on its back and spread this solution with the help of a rubber spatula. Let it cool for 2 minutes.
After 2 minutes, cut it into long strips with the help of a knife. And roll slowly. Take care that it does not break.
Follow the same process and prepare the rest of the Khandvi. Now arrange all the Khandvi in a plate.

Now heat oil in a pan for tempering. Add mustard seeds, cumin seeds and sesame seeds and let them crackle. Now add curry leaves and mix. Now pour this over the prepared khandvi. Now garnish it with grated coconut and green coriander.
Now your Gujarati special khandvi/patodi is ready to serve. Serve it hot for breakfast or serve it as a side dish for lunch or dinner.
