Ingredients:
1 large eggplant
1 small onion
2-3 medium-sized tomatoes
7-8 garlic cloves
1/4 cup spring onions
2-3 whole dried Kashmiri red chilies (soaked)
1-2 green chilies
1 teaspoon cumin seeds
1/4 teaspoon asafoetida
1 teaspoon coriander powder
1/2 teaspoon red chili powder
1/2 teaspoon turmeric powder
1/2 teaspoon Kitchen King masala/garam masala
Salt to taste
Green coriander leaves
2 tablespoons mustard oil + 2 tablespoons mustard oil

Instructions:
First, make small cuts in the eggplant with a knife and generously coat it with mustard oil. Add 3-4 garlic cloves to the cuts and cook over open heat, browning the eggplant from all sides.
Cook over low-medium heat until the skin turns black and shrinks slightly. Cooking over low-medium heat will also soften the inside.
Now, coat 2-3 tomatoes with mustard oil and cook over low heat until the skin turns slightly black.
Remove the eggplant and tomatoes onto a plate, cover, and set aside for 5 minutes.
After 5-7 minutes, peel the eggplant and tomatoes. Mash them with a masher or fork.
Heat a pan with 2 tablespoons of mustard oil. Add mustard seeds and asafoetida and let them crackle.
After this, add the onion and fry it well till it becomes transparent. Now add turmeric powder, coriander powder, red chilli powder and salt as per taste, mix it well and cook for 2 minutes.
Now, put the soaked whole dry Kashmiri red chilli and 3-4 cloves of garlic in a mixer jar and make a fine paste.
Once all the spices are cooked well, add the Kashmiri red chilli and garlic paste to it, mix, and let it cook for a short time.
Now add the kitchen king masala/garam masala, mashed mixture of brinjal and tomato to it and mix it. Mix everything well and garnish it with spring onion or green coriander leaves.
Finally tasty and easy Eggplant Bharta Recipe is ready to serve. Serve it with hot millet or jowar roti.
