You can even make it with leftover rotis from the previous night. It's made with paneer combined with some healthy vegetables and sauces. You can also pack it in your kids' lunchboxes. So, let's learn about this cheesy paneer wrap recipe.


Ingredients:

200 grams paneer (Indian cottage cheese), cut into strips or cubes

1 cup grated mozzarella or processed cheese

1 onion, finely chopped

1 bell pepper, thinly sliced

2 tablespoons oil or butter

2 tablespoons tomato ketchup or pizza sauce

1 teaspoon chili flakes

1 teaspoon mixed Italian herbs or garam masala

Salt and pepper to taste

4 whole wheat or plain flour rotis/wraps/tortillas

Green chutney or mayonnaise (optional)

Fresh coriander leaves, chopped (for garnish)


Homemade Cheesy Paneer Roll Wrap


Instructions:


Prepare the paneer filling:

Heat oil or butter in a pan.

Add the onion and sauté until softened.

Add the bell pepper and cook for 2 minutes.

Add the paneer cubes/strips and sauté for another 2-3 minutes.

Add the tomato ketchup/pizza sauce, chili flakes, herbs/garam masala, salt, and pepper.

Cook until everything is well combined and the paneer is coated with the sauce.

Add half of the cheese and mix well. Turn off the heat.


Prepare the wraps:

Warm the rotis/wraps on a griddle or pan.

Spread a little green chutney or mayonnaise, if desired.

Place a generous amount of the paneer filling in the center.

Sprinkle the remaining cheese over the filling.

Garnish with fresh coriander.


Wrap and toast:

Roll the wrap tightly, folding in the edges.

Grill or toast the wrap on a pan with a little butter for 1-2 minutes on each side until crispy and the cheese is melted. 


Serving suggestion:

If desired, cut in half, and serve hot with extra ketchup, chutney, or your favorite dip.
