Ingredients:
For the Frankies:
4 whole wheat rotis or parathas
1 packet (100 grams) Hakka noodles
1/2 cup mixed bell peppers, julienned
1/4 cup carrots, julienned
1/4 cup cabbage, shredded
1/4 cup onions, thinly sliced
2 tablespoons Schezwan sauce (or to taste)
1 tablespoon soy sauce
1 teaspoon vinegar
1/2 teaspoon black pepper powder
Salt to taste
Oil for cooking
For Garnish:
2 tablespoons chopped green onions
Extra Schezwan sauce or mayonnaise

Instructions:
Prepare the Noodles:
Boil the noodles according to package instructions. Drain the water and toss with a little oil to prevent sticking.
Make the Noodle Filling:
Heat 1-2 tablespoons of oil in a large pan or wok. Add the onions and sauté for a minute.
Add the bell peppers, carrots, and cabbage. Stir-fry on high heat for 2-3 minutes.
Add the boiled noodles, Schezwan sauce, soy sauce, vinegar, black pepper, and salt. Toss everything together and cook for another 2 minutes. Turn off the heat and sprinkle with green onions.
Heat the rotis/parathas:
Heat each roti or paratha on a pan until warm and slightly crispy.
Assemble the frankies:
Place one roti/paratha on a plate. Spread a little Schezwan sauce or mayonnaise (optional).
Place a generous portion of the noodle filling in the center.
Roll it up tightly to make a wrap.
Repeat with the remaining rotis and filling.
Serve:
Serve hot with extra Schezwan sauce or your favorite dip.
Tips:
Add paneer, tofu, or cheese for extra protein.
Adjust the spice level to your liking.
For extra crunch, add some lettuce or fresh cucumber slices inside the roll.
