Ingredients:
4 whole wheat or plain flour rotis/wraps/tortillas
1 medium potato, boiled and mashed
1 carrot, grated
1/2 cup cabbage, shredded
1/2 cup bell pepper, thinly sliced
1 onion, thinly sliced
1-2 green chilies, finely chopped (optional)
2 tablespoons sweet corn (optional)
2 tablespoons oil
1/2 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1/2 teaspoon chili powder
1/2 teaspoon garam masala
1/2 teaspoon chaat masala (optional)
Salt and pepper to taste
2 tablespoons tomato ketchup or green chutney
2 tablespoons mayonnaise or hung curd (optional)
Fresh coriander leaves, chopped

Instructions:
Prepare the filling:
Heat oil in a pan. Add cumin seeds and let them splutter.
Add the chopped onions and sauté until translucent.
Add the grated carrot, shredded cabbage, sliced bell pepper, and sweet corn. Sauté for 3-4 minutes over medium heat.
Add the boiled potato, turmeric powder, chili powder, garam masala, chaat masala, salt, and pepper. Mix well.
Cook for another 2-3 minutes until the vegetables are slightly tender but still have a slight crunch.
Add the chopped coriander leaves and let the filling cool slightly.
Prepare the rotis/wraps:
Warm the rotis or tortillas on a pan.
Spread a little ketchup, green chutney, or mayonnaise on each wrap (as desired).
Assemble the rolls:
Place a generous amount of the vegetable filling in the center of each wrap.
