Ingredients:
2 medium potatoes, peeled and diced
2 medium eggplants, diced
1 large onion, finely chopped
2 tomatoes, chopped
2 green chilies, slit lengthwise (optional)
1 teaspoon cumin seeds
1 teaspoon mustard seeds (optional)
1 teaspoon ginger-garlic paste
1/2 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon red chili powder (to taste)
1/2 teaspoon garam masala
Salt to taste
2–3 tablespoons oil
Fresh coriander leaves, chopped (for garnish)

Instructions:
- Heat oil in a pan. Add cumin seeds (and mustard seeds, if using). Let them splutter.
- Add chopped onion and sauté until golden brown.
- Add ginger-garlic paste and green chilies. Sauté for a minute.
- Add chopped tomatoes. Cook until the tomatoes soften and the oil separates.
- Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.
- Add the diced potatoes and eggplants. Mix the vegetables well with the spices.
- Cover and cook on low heat, stirring occasionally, until both the potatoes and eggplants are tender (about 15–20 minutes). Sprinkle a little water if needed to prevent sticking.
- Once cooked, add garam masala. Mix and cook for another 1–2 minutes.
- Garnish with fresh coriander leaves.
- Serve hot with roti, paratha, or rice.
