Ingredients:
Bunch of spinach
1 cup paneer
2-3 tbsp oil/ghee
1 tsp butter
1/4 tsp sugar
A pinch of asafoetida
1/2 tsp cumin seeds
1/2 cup finely chopped onion
1/2 tomato puree
1/2 tbsp ginger-garlic paste
2 green chilies finely chopped
1/2 tsp turmeric powder
1/2 tsp red chili powder
1/2 tsp coriander-cumin powder
1/4 tsp garam masala
Salt to taste
1/4 cup fresh cream
For tempering:
1-2 dried Kashmiri red chilies
1 tsp Kashmiri red chili powder
2-3 tbsp oil

Instructions:
1. Firstly, take 2-3 cups of water in a large vessel, add some salt and sugar, and heat it. When the water boils, add spinach and mix. Now cook it on a high flame for 5-7 minutes. Turn off the gas after 5-7 minutes.
2. Now take out the spinach from it. Now add cold water and ice cubes to the bowl. Now add boiled spinach and keep it for 5 minutes.
3. When the spinach cools down, put it in a mixer jar and grind it finely.
4. Now heat 2-3 tablespoons of oil in a pan. Now, fry the paneer in it till it becomes golden brown. Take out the fried paneer pieces in a bowl.
5. Now add asafoetida in the same pan, fry, add cumin seeds, and let them crackle. Now add chopped onion and fry well till it becomes transparent.
6. Now add fresh tomato puree and cook for 2 minutes. Now add turmeric powder, red chili powder, coriander leaves, cumin powder, and garam masala and mix well. Cook for 2-3 minutes till the oil separates.
7. Now add the ground spinach paste and mix well. Add salt as per taste and let it cook for 5 minutes.
8. Now add fried paneer pieces and then add fresh cream to it. Or mix all well.
9. Now heat 2-3 tbsp oil in a small pan and add dried red chilies and Kashmiri red chili powder and mix well. Now pour this mixture over the palak paneer.
10. Now your palak paneer sabzi is ready to serve. You can serve it with tandoori roti, naan or paratha.
