Ingredients:
4 large russet potatoes
cold water
2–3 cups vegetable oil (for frying)

Instructions:
Peel the potatoes (if desired) and cut them into 1/4-inch-thick strips.
Soak the potato strips in a bowl of cold water for at least 30 minutes (or up to a few hours). This removes excess starch and helps them become crispy.
Drain the potatoes and pat them completely dry with a kitchen towel.
Heat the oil in a deep fryer or large, heavy-bottomed pot to 325°F (165°C).
Fry the potatoes in batches for about 3–4 minutes until they are tender but not yet golden. Remove with a slotted spoon and place on paper towels. Let them cool for a few minutes.
Increase the oil temperature to 375°F (190°C).
Return the fries to the hot oil in batches, and fry for another 2–3 minutes until golden brown and crispy.
