So let's know the complete recipe of this quick Ganthiya ki Sabzi.
Ingredients:
1 cup gathiya
1 medium onion finely chopped
2 medium tomatoes, chopped into cubes
2 medium fresh tomato puree
2 tbsp yogurt (not sour)
1 tbsp ginger-garlic and green chilli paste
7-8 curry leaves
1/2 tsp mustard seeds
1/2 tsp cumin seeds
A pinch of asafoetida
1 tsp Kashmiri red chilli powder
1 tsp coriander powder
1/2 tsp cumin powder
1/4 tsp turmeric powder
Salt to taste
Coriander leaves for garnishing
Water as required

Instructions:
Firstly, add turmeric powder, coriander powder, kashmiri red chilli powder, and cumin powder in a bowl and make a paste by adding 4-5 tbsp of warm water. Keep it aside.
Now heat oil in a pan. Add mustard seeds, cumin seeds, and asafoetida, and let them crackle.
Now add onion and fry till it becomes transparent. After the onion becomes transparent, add chopped tomatoes and mix well. Add salt as per taste and cover and cook for 5 minutes.
After 5 minutes, add tomato puree and mix. Also, add the previously prepared masala paste and mix everything well. Keep the flame of the gas on low.
Now add curd and mix well and let it cook for 2 minutes. When the oil starts separating, add some warm water. When it boils, add gathiya and coriander leaves and turn off the gas. Cover and keep it for 2 minutes. Decide the consistency of the curry according to your taste.
Finally, Gathiya ki sabzi is ready. You can serve it with roti, paratha, or rice.
