Ingredients:
8 slices of bread (white or whole wheat)
200 grams paneer (cottage cheese), crumbled or mashed
2 green chilies, finely chopped
1 small onion, finely chopped (optional)
1 teaspoon ginger paste
2 tablespoons fresh coriander leaves, chopped
1/2 teaspoon red chili powder
Salt to taste
1 cup gram flour (besan)
1/2 teaspoon carom seeds (ajwain)
1/2 teaspoon baking soda (optional, for crispiness)
Water, as needed

Instructions:
Prepare the paneer filling:
In a bowl, combine the crumbled or mashed paneer, green chilies, onion (if using), ginger paste, chopped coriander leaves, red chili powder, garam masala, and salt.
Adjust the spices to your taste.
Prepare the gram flour batter:
In another bowl, combine the gram flour, turmeric powder, carom seeds, salt, and baking soda.
Gradually add water to make a thick, smooth batter (it should coat the back of a spoon).
Assemble the pakoras:
Take one slice of bread, spread the paneer filling evenly, and cover with another slice. Press gently.
Cut into halves or triangles, as desired.
Fry the pakoras:
Heat oil in a deep pan over medium heat.
Dip each filled bread piece into the gram flour batter, ensuring it is well coated.
Carefully place in the hot oil and fry until golden brown and crispy on both sides.
Remove and drain on paper towels.
Serve:
Serve hot with green chutney or tomato ketchup.
