 1 cup gram flour (besan)

 1/4 cup rice flour (optional, for extra crispiness)

 1/2 teaspoon turmeric powder

 1 teaspoon cumin seeds or carom seeds (ajwain)

* 1 teaspoon red chili powder (to taste)

* 1/2 teaspoon garam masala (optional)

* 1/2 teaspoon baking soda (optional)

* Salt to taste

* 1-2 green chilies, finely chopped

* 1/2 cup onion, thinly sliced

* 1/2 cup potatoes, thinly sliced ​​or grated

* 1/2 cup mixed vegetables (cauliflower florets, spinach leaves, carrots, bell peppers, etc.), chopped into small pieces

* 2-3 tablespoons fresh coriander leaves, chopped

* Water (as needed)

* Oil for frying


Vegetable Pakora/Vegetable Fritters Recipe 


Instructions:

1. In a large bowl, combine the gram flour, rice flour, turmeric powder, cumin seeds, red chili powder, garam masala, baking soda, and salt.

2. Add the chopped vegetables, onion, potatoes, green chilies, and coriander leaves to the bowl.

3. Gradually add water and mix until you get a thick, sticky batter that coats the vegetables well. Do not make it too thin.

4. Heat oil in a deep frying pan over medium-high heat.

5. Once the oil is hot, drop spoonfuls of the batter into the oil. Do not overcrowd the pan.

6. Fry the pakoras in batches, turning them occasionally until they are golden brown and crispy on all sides (about 3-5 minutes). 7. Remove the pakoras with a slotted spoon and place them on paper towels to drain off excess oil.

8. Serve hot with green chutney, tamarind chutney, or ketchup.
